Chedi – (pronounced jeh-dee) is a bell-shaped Buddhist monument; found in the compounds of Thai temples. It is symbolic of the mythical mountain abode of the gods. Known as a pagoda in other parts of Asia; these distinct structures are built to encase sacred relics of Buddha, symbols of Buddhism and to venerate revered monks.

Shanya Richardson – (Brigade Leader) better know by her Thai nickname: Kai; comes from a family of restaurateurs & knows a lot about Thai food. She was born in Yaowarat, Bangkok’s Chinatown & grew up surrounded by noodle stands, food stalls, bustling restaurants & everywhere the spicy aroma of Thai food. At the age of 19, she moved to Sydney & by 25 had opened her first restaurant: Thaifoon. During the following 5 years, she opened a further 2 Thai restaurants in Newtown & Darlinghurst, before family matters drew her back to Thailand. After nearly 10 years absence, she returned to Sydney with a brigade of gifted Thai chefs to open Chedi Restaurant.

Chedi Restaurant simply began as a dream to offer Thai cuisine with fine-dinning standards of preparation, presentation and service. Purely, that is what Chedi is about: good food, good service, and a testament to someone who knows how to run a good restaurant.
